How can I edit the Header?
It is usually "Appearance -> Header" here, but is not.

Just one more thing, on the top right of the header shows a Phone and an Address, how can I edit those? or if I want to add more items?

Regarding the header widgets, they can be edited in Appearance >Customize >Widgets panel, Header Right widgets.
